Dive into the tantalizing fusion of zesty kumquats and rich cheese in this Kumquat Cheesecake recipe. Tailored for any event, this dessert stands out with its harmonious balance of sweet and tart notes, complemented by a silky texture.


Ingredients: 60g almonds, 25g oats, 2 kumquats, 120g dates, 15g cocoa powder, 420g cream cheese, 3 eggs, 20g oats, 130g fine sugar (40g + 90g), 1 vanilla pod, 200ml light cream, 50g kumquat marmalade, 8 kumquats, 50g granulated sugar, 10ml water, 1 vanilla pod, 15ml kumquat marmalade, Juice of half a lime


Instructions:


Cake Base:


1. Preheat the oven to 180℃.


2. Cut the kumquats in half, remove the seeds, and chop them. Place the almonds, oats, and dates into a food processor and process into a powder. Add the cocoa powder and chopped kumquats and continue to process at high speed.


3. Pour the mixture into an 8-inch round cake mold and press it down with your hands.


4. Bake in the oven for about 20 minutes, then cool and set aside.


Cheesecake:


1. Separate the egg whites and yolks.


2. Whip the egg whites with 40g of granulated sugar until stiff peaks form.


3. In a separate bowl, mix the cream cheese, egg yolks, oats, and remaining sugar.


4. Split the vanilla pod lengthwise and scrape out the seeds. Place the seeds in a bowl with the jam and light cream and mix well.


5. Beat together the cream cheese mixture and vanilla mixture until well combined.


6. Fold in a small portion of the egg whites, then carefully fold in the remaining egg whites.


7. Pour the cheesecake mixture into the mold with the cookie base and shake gently to remove any air bubbles.


8. Bake in a preheated oven at 180℃ for about 40-45 minutes.


9. After baking, let it cool down, cover with foil or plastic wrap, and refrigerate overnight.


Decoration:


1. Split another vanilla pod lengthwise and scrape out the seeds. Cut the kumquats in half to remove the seeds, then slice them.


2. Place all of the decoration ingredients except for the lime juice into a small saucepan over low heat until the kumquats become translucent.


3. Turn off the heat and squeeze in the lime juice. Mix well and let cool completely (sift out the vanilla pods before serving).


4. Pour the decoration evenly over the cheesecake.


This recipe combines sweet and sour flavors of kumquat with creamy cheese to create a delicious dessert that is light yet satisfying.
